Ingredients

Instructions

  1. In a mixer grinder, blend the garlic, ginger, green chillies and fresh coriander with a very little water into a fine paste.
  2. In a bowl, mix the prawns with the green paste, salt, turmeric and agal, then set aside to marinate.
  3. If you have no agal, use some tamarind paste or lemon juice instead.
  4. Heat the oil in a tawa over high heat.
  5. Add the onions and garlic cloves and cook over medium-high heat until golden brown.
  6. Add the remaining green paste and cook until the onions turn golden brown.
  7. If the masala gets too dry, add a little hot water and keep cooking.
  8. Lower the heat, add the powdered spices and a splash of hot water, and cook over high heat for 1 to 2 minutes.
  9. Add the tomato and salt, and cook for 2 to 3 minutes, adding splashes of hot water if it dries out.
  10. Spread the marinated prawns over the pan and cook over high heat, stirring occasionally and not too much, until they are cooked.
  11. Stir in some fresh coriander, heat the ghee in a ladle, pour it over the prawns and stir well.
