Ingredients
- Date20–25
- Goat cheese6 oz
- Mascarpone cheese
- Prosciutto8–10 slices
- Olive oil1 tbsp
- Thyme2 tbsp
- Honey2 tbsp
- Balsamic glaze2 tbsp
Instructions
- Let the cheese soften at room temperature: about 30 minutes for goat cheese, 10–15 minutes for mascarpone, and about 30 minutes for hard blue cheese, then crumble it.
- Preheat the oven to 425°F (218°C) and line a small baking sheet with parchment.
- Cut each date lengthwise across the top with a paring knife and remove the pit.
- Stuff each date generously with the softened cheese and press it lightly closed; it will not close fully.
- Cut each prosciutto slice into 3 lengthwise strips. Wrap each date in prosciutto and place on the sheet seam side up.
- Brush the dates lightly with olive oil and sprinkle with fresh thyme. Bake at 425°F (218°C) for 8–12 minutes, until the cheese is soft and the prosciutto is lightly crisp.
- Let the dates cool for about 5 minutes, then drizzle lightly with honey and/or balsamic glaze. Serve warm within an hour.
