Pulled Jackfruit Sandwiches
Ingredients
- Jackfruit2
- Red onion½
- Garlic · minced1 tsp
- Ginger · minced1 tsp
- Salt¼ tsp
- Barbecue seasoning2–3 tbsp
- Bbq sauce¾ cups
- Slaw mix3 cups
- Mayonnaise¼ cups
- Apple cider vinegar1 tbsp
- Maple syrup½ tbsp
- Dashes of salt and freshly ground black pepper
Instructions
- Drain the jackfruit, then squeeze it in a thick kitchen towel to remove as much liquid as possible.
- Shred the jackfruit by hand or with a knife until mostly pulled apart, and remove any hard seeds.
- Put the jackfruit in a large bowl with the sliced onion, garlic, ginger, bbq seasoning, sugar or maple syrup mixture, and salt, and mix well.
- Add 1/2 to 2/3 cup bbq sauce and mix. If it is too thick, stir in 2 tbsp veggie broth.
- Spread the mixture in a parchment-lined large baking dish and bake at 400°F for 30 minutes.
- Press the larger pieces with a spatula, then taste and adjust salt, sweetness and heat, and stir the jackfruit around.
- Spread it out again and bake another 15 to 25 minutes, until it reaches your preferred dryness and some edges are caramelized and crispy.
- Make the slaw: mix the slaw mix with the mayo, vinegar, maple syrup, salt and pepper, taste and adjust, then chill for 15 minutes.
- Mix 2 to 4 tbsp bbq sauce into the baked jackfruit, then assemble sandwiches with jackfruit, extra bbq sauce and slaw.
