Instructions
- Trim the heavy fat from the pork butt with a flexible boning knife, then score the remaining fat.
- Coat the pork all over with the 3 tablespoons avocado oil, then cover it completely with pork rub. Let it sit at room temperature for 1 hour.
- Preheat the oven to 300°F (150°C). Set the pork on a rack over a rimmed sheet pan and roast for 3 hours.
- Place the pork on a thick sheet of foil, drizzle with the apple juice and dot with the butter. Wrap it tightly and return it to the rack over the pan. Roast 3 to 4 more hours, until very tender and it shreds easily with a fork.
- Take the pork out, let it rest wrapped for at least 1 hour, then shred it.
- For the slaw, whisk the 1/4 cup avocado oil, lime juice, honey, coriander, garlic and 1/2 teaspoon salt in a small bowl. In a large bowl, combine the red cabbage, red onion, cilantro and jalapeños, then toss with the dressing.
- To serve, pile the pulled pork onto warm tortillas and top with queso fresco, the slaw and avocado slices.
