Instructions
- Preheat the oven to 175°C (350°F). Grease a 22 x 12 cm (9 x 5-inch) loaf pan with nonstick spray and line it with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, cloves and allspice.
- In a large bowl, whisk together the pumpkin purée, melted butter, eggs, granulated sugar and brown sugar until smooth and evenly mixed.
- Add half the dry ingredients to the wet ingredients and stir with a large spatula. Add the rest and mix until just combined, without overmixing.
- Warm the Nutella in the microwave for 1 minute, until pourable.
- Spread about one-third of the batter evenly in the prepared pan. Drizzle half the Nutella on top, add another third of the batter, then the remaining Nutella, then the rest of the batter. Gently swirl the Nutella into the batter with a butter knife.
- Bake for 65 to 70 minutes, rotating the pan 180° halfway through, until a toothpick inserted in the centre (away from the Nutella) comes out clean.
- Cool in the pan for about 30 minutes, then lift out by the parchment and cool completely.
- Chill a large metal bowl in the fridge or freezer for about 15 minutes.
- Pour the 1 tablespoon cold water into a small bowl, sprinkle the gelatin over it, stir so no dry granules remain, and let it bloom for 5 minutes.
- Remove the chilled bowl. Add 1½ cups cold cream, the powdered sugar, vanilla and salt, and whip on medium speed until soft peaks form, 2 to 3 minutes.
- Microwave the gelatin for 8 to 10 seconds until fully liquid and no granules remain. Stir in the remaining 1 tablespoon cold cream.
- With the mixer on medium-low, drizzle the gelatin mixture into the cream and whip until fully incorporated. Then whip until medium-stiff peaks form, about 30 seconds. Transfer to a piping bag or spread by hand.
- Quickly frost the cooled cake and add sprinkles if using. Serve immediately or refrigerate no more than 3 hours.
