- Flour2 ⅓ cups
- Salt1 ½ tsp
- Butter1 cup
- Sugar1 cup
- Cinnamon1 tsp
- Nutmeg½ tsp
- Ginger · ground½ tsp
- Egg2
- Pumpkin2 cups
- Evaporated milk1 ⅓ cups
- Cream
- Half & half
- Whipped cream
Instructions
- Put the flour, salt and sugar (if using) into a large mixing bowl.
- Cut the butter into small cubes and add it to the bowl.
- Rub the butter into the flour with clean, dry hands until it looks like sand.
- Add a few tablespoons of ice water and mix with a knife until the pastry comes together.
- Form a ball and knead on a floured surface for 30 seconds until smooth.
- Wrap in plastic wrap and chill for at least 30 minutes.
- Take the pastry out and let it warm for 5 to 10 minutes before rolling.
- Roll out and fit into a pie dish. Trim the excess to leave an overhang of about 1/2 inch, then fold it under and crimp into a scalloped edge. Chill the crust.
- In a clean bowl, whisk the sugar, spices and eggs until no lumps remain.
- Add the pumpkin puree and cream or evaporated milk, and whisk until smooth and creamy.
- Pour the filling into the chilled crust after it has chilled at least 30 minutes.
- Put into a 230°C / 450°F oven, then immediately lower the heat to 170°C / 325°F. Bake for about 50 minutes to 1 hour, until the centre only slightly jiggles.
- Cool completely, then refrigerate for at least a few hours.
- Serve cold with whipped cream and a sprinkle of cinnamon.
