Pumpkin Waffles
Ingredients
- Flour2 cups + 2 tbsp
- Baking powder2 tsp
- Baking soda1 tsp
- Cinnamon · ground2 tsp
- Pumpkin1 + 1 cup
- Ginger · ground¼ tsp
- Salt¼ tsp
- Egg3
- Butter · melted¼ cups
- Brown sugar¼ cups
- Maple syrup¼ cups + 1
- Vanilla1 tsp
- Milk1
- Pecan¾ cups
Instructions
- Preheat the waffle maker to medium-high and the oven to 200°F (93°C). Set a wire rack on a baking sheet.
- Whisk the flour, baking powder, baking soda, cinnamon, pumpkin pie spice, ginger and salt together in a large bowl.
- In another large bowl, beat the eggs on high for 1–2 minutes until frothy. Add the pumpkin, melted butter, brown sugar, maple syrup, vanilla and milk and mix on medium until combined.
- Pour the dry ingredients into the wet and mix on low until just combined. Small lumps are fine; do not overmix.
- Grease the waffle maker. Pour about 1/3 cup of batter into each well (less if your maker is smaller), close the lid and cook about 5–6 minutes until crisp.
- Move the finished waffles to the rack in the oven to keep warm while you cook the rest of the batter.
- For the optional pecan topping, toast the pecans in a saucepan over medium-low heat for about 4–5 minutes, stirring constantly, until they smell toasty.
- Lower the heat to low, add the maple syrup and warm for about a minute, then take off the heat.
- Serve the waffles right away with the warm maple pecan topping or your own toppings.
