Ingredients

Instructions

  1. Rinse the chana dal and pressure cook it until soft: 5 to 6 whistles in a stovetop cooker, or 10 minutes in an Instant Pot.
  2. Meanwhile, mix the flour, salt, turmeric and ¾ cup water into a soft dough, adding more water as needed. Drizzle in the oil and knead until absorbed. Cover and rest.
  3. Once the pressure has dropped, open the cooker, drain the dal, let it cool slightly, then blend it to a fine powder or paste.
  4. Return the smooth dal to the cooker with the grated or powdered jaggery and cook on medium heat (saute mode in an Instant Pot), stirring until the jaggery melts and the mixture turns gooey.
  5. Keep stirring until the filling thickens and most of the moisture evaporates.
  6. Add the ghee and sauté until the filling leaves the pan and is thick. Stir in the cardamom and nutmeg (if using), then let it cool completely.
  7. Divide the dough and the filling each into 12 equal portions, keeping the dough covered.
  8. Dust a dough ball in all-purpose flour, flatten it into a 4-inch disc, place a portion of filling in the centre, gather the edges over it and seal.
  9. Flatten the sealed ball, dust it with flour and roll it evenly without pressing hard into an 8 to 9 inch poli, adding a little flour where it gets thin. Make 3 to 4 at a time before cooking.
  10. Heat a pan on medium-high. Dust off excess flour, place the poli in the pan, and cook until bubbles appear. Flip, press gently with a spatula, and when it puffs, drizzle about 1 tsp ghee. Flip again, add more ghee, and cook until golden to light brown spots show on both sides and the edges are cooked.
  11. Serve warm, brushing enough ghee on each before stacking.
