- Add the garlic and cook, stirring, for 1 to 2 minutes.
- Stir in the tomato paste.
- Add the crushed black pepper, pink salt, roasted crushed cumin, red chilli powder, dried oregano, soy sauce and lemon juice. Mix well and cook for 2 to 3 minutes.
- Add the water and stir. Cover and cook on low heat for 8 to 10 minutes, then cook on high heat until the liquid dries up.
- Turn off the heat, stir in the cream, then add the grated cheddar, capsicum, onion and chopped coriander and mix well. Set the filling aside.
- Cut the burger buns in half and press the centre of each with your fingers to make a hollow.
- Fill each bun with a cheese slice, the beef filling, more grated cheddar, dried oregano and crushed red chilli. The recipe makes 12 to 14 buns.
- To bake: heat the oven to 200°C and bake the buns for 8 to 10 minutes.
- To cook on the stove instead: place the buns in a frying pan, cover, set a preheated heat diffuser or tawa underneath, and cook on low heat until the cheese melts, about 8 to 10 minutes.
- Sprinkle with fresh coriander before serving.
