Ingredients

Instructions

  1. Put the flour, yeast and salt in a bowl and mix with a spatula. Make a well, pour in the very warm water and mix until no dry flour remains. The dough will be very sticky, like a thick muffin batter.
  2. Cover the bowl and leave it in a very warm place for 2 hours, or until doubled in size. (Alternatively, rise in the fridge for 24 to 48 hours.)
  3. Line a 26.5 x 20 x 5 cm (10.5 x 8 x 2 in) metal rectangular pan, or a 22 cm (9 in) square pan, with baking paper, leaving overhang. Grease lightly with butter.
  4. Spread 1/2 tablespoon of olive oil over the paper in the pan. Pour in the dough and gently spread it toward the corners.
  5. Cover the pan with a flat board and leave it in a very warm place for 45 minutes, or until risen by 50-70%. Preheat the oven halfway through this rise.
  6. Preheat the oven to 220°C / 425°F (200°C fan), with the rack in the middle.
  7. Drizzle 1 tablespoon of olive oil over the surface and spread it lightly with oiled fingertips.
  8. Lightly press dimples about 1 cm (0.4 in) deep into the dough, sprinkle with the salt flakes.
  9. Bake for 25 minutes, turning the pan at the 15-minute mark, until the top is deep golden. Lift out with the paper, cool on a rack for 10 minutes, and serve warm.
