Quick And Easy Creamy Pink Sauce With Two Of My Favorite Ingredients
Ingredients
- Pasta½ lb
- Onion · diced1
- Pea · frozen1 cup
- Mushroom · sliced½ lb
- Parmesan cheese½ cups
- Heavy cream½ cups
- White wine½ cups
- Olive oil3 tbsp
- Tomato paste3 oz
- Chili flake · crushed¼
- Basil¼ cups
Instructions
- Sauté the diced onion in olive oil over medium-low heat until translucent, about 3-5 minutes.
- Add the sliced mushrooms, turn the heat to medium and cook until they release their water and start to brown.
- Add the crushed red pepper and cook for 30 seconds. Add the white wine, turn the heat to medium-high and cook until the wine evaporates, about 2-3 minutes.
- Turn the heat to medium-low, add the tomato paste and cook for 3 minutes, stirring often.
- Add a ladle of pasta water and stir. Then add the cream and cheese and cook until the cheese melts.
- Add the al dente pasta to the sauce and cook for 1 more minute to coat it. If the sauce is too wet, add a bit more cheese and stir. If too dry, add a little more pasta water.
- Taste and adjust the salt and pepper. Finish with torn basil leaves if you like, and serve with extra grated cheese and red pepper flakes.
