Ingredients
- Pasta1 lb
- Salt
- Garlic · thinly sliced4 cloves
- Extra virgin olive oil6 tbsp
- Cherry tomato1 ½ lb
- Basil · roughly chopped1 oz
- Black pepper · ground
- Parmesan cheese · for serving
Instructions
- Cook the pasta in a large pan of salted water until just shy of al dente, about 1 minute less than the package says.
- Meanwhile, cook the garlic in 4 tablespoons of olive oil in a 12-inch skillet over medium heat, stirring often, until softened but not browned, about 3 minutes.
- Add the tomatoes and cook, stirring, until they begin to burst; press them with the back of a wooden spoon to help.
- Keep cooking, stirring, for about 5 more minutes until the sauce is rich and creamy. Stir in the basil and season with salt and pepper.
- Drain the pasta, reserving a cup of the cooking water. Add it to the sauce and raise the heat to medium-high.
- Toss constantly, adding pasta water as needed to get a creamy consistency.
- Off the heat, stir in the remaining olive oil and a generous amount of Parmesan. Serve immediately.
