Ingredients

Instructions

  1. Soak the red lentils in water for 2–3 hours, or in about 3 cups of hot water from a kettle for about 30 minutes.
  2. Peel the garlic. Roughly chop half the red onion, the carrots and the cilantro. Rinse and drain the lentils, then add them to a food processor with the chopped vegetables, garlic, cilantro, 1 teaspoon salt, sweet paprika, smoked paprika and cayenne.
  3. Blend for about 30 seconds, scrape down the sides, then blend for another 30 seconds.
  4. Scoop about 1/3 cup of mixture per patty and shape into patties. Refrigerate them for a few minutes.
  5. Heat the avocado oil in a frying pan over a little under medium heat for a few minutes. It is ready when a bamboo chopstick stuck in the oil produces fast-moving bubbles.
  6. Carefully fry the first batch for 3–4 minutes, turn them carefully, cook a couple more minutes, then transfer to a cooling rack. Repeat with the second batch.
  7. Make the sauce by combining the tahini, lemon juice, a pinch of salt and the za'atar. Thin with a little water if too thick, or add a little tahini if too thin.
  8. Toast the buns and thinly slice the other half of the red onion. Assemble the burgers with micro greens, the patties, onion, sauce and pickles.
