Preparación
- Soak the red lentils in water for 2–3 hours, or in about 3 cups of hot water from a kettle for about 30 minutes.
- Peel the garlic. Roughly chop half the red onion, the carrots and the cilantro. Rinse and drain the lentils, then add them to a food processor with the chopped vegetables, garlic, cilantro, 1 teaspoon salt, sweet paprika, smoked paprika and cayenne.
- Blend for about 30 seconds, scrape down the sides, then blend for another 30 seconds.
- Scoop about 1/3 cup of mixture per patty and shape into patties. Refrigerate them for a few minutes.
- Heat the avocado oil in a frying pan over a little under medium heat for a few minutes. It is ready when a bamboo chopstick stuck in the oil produces fast-moving bubbles.
- Carefully fry the first batch for 3–4 minutes, turn them carefully, cook a couple more minutes, then transfer to a cooling rack. Repeat with the second batch.
- Make the sauce by combining the tahini, lemon juice, a pinch of salt and the za'atar. Thin with a little water if too thick, or add a little tahini if too thin.
- Toast the buns and thinly slice the other half of the red onion. Assemble the burgers with micro greens, the patties, onion, sauce and pickles.
