Quinoa Fried Rice
Ingredients
- Quinoa1 cup
- Carrot⅓ cups
- Green bean⅓ cups
- Bell pepper⅓ cups
- Scallion3 sprigs
- Garlic1 tbsp
- Chili pepper1
- Oil7 tsp
- Black pepper¼–½ tsp
- Salt1–1 ½ tsp
- Tamari1 tbsp
- Rice wine vinegar½ tsp
- Paneer125 g
- Egg2–3
Instructions
- Rinse the quinoa well in a bowl, rubbing it with your fingers, then drain thoroughly.
- Return the quinoa to the bowl, add 1¾ cups water and bring to a rolling boil over high heat. Reduce the heat to low, cover and cook until tender but not mushy.
- Turn off the heat, cover and rest for 10 minutes. Fluff with a fork and let it cool.
- Separate the white and green parts of the spring onions. Mix the soy sauce and rice vinegar in a small bowl. If using eggs, beat them well in a bowl.
- Heat the oil in a wok over medium-high heat. Add the green chilli, the white parts of the spring onions (optional) and the garlic, and fry for about 1 minute until fragrant without browning.
- Add the vegetables and salt and stir-fry until slightly tender but not overcooked. Reduce the heat to medium.
- If using eggs, push the vegetables to one side, pour in the beaten eggs and scramble until soft-set, without overcooking.
- Add the cooled quinoa, the soy and vinegar mixture and the black pepper. Stir-fry for 1-2 minutes until the quinoa is hot.
- Stir in the green parts of the spring onions, if using. Taste and add more salt or soy sauce if you like. Serve hot or warm.
