Ingredients

Instructions

  1. Put the milk in a heavy pot, bring to a boil, then reduce to low and simmer until it is reduced to about half (3 cups).
  2. Meanwhile, bring 1 cup of water to a boil, add the almonds and pistachios, turn off the heat and let them rest until the skins loosen (10 to 15 minutes). Drain, peel, finely chop and set aside.
  3. Transfer 2 to 3 tablespoons of the hot milk to a small bowl, add the saffron and let it soak.
  4. As the milk simmers, a layer of cream forms on top each time. Push it to the sides of the pot and stir the milk occasionally to prevent scorching. Repeat until the milk is reduced to half.
  5. When the milk is halved, add the sugar and scrape the cream layers from the sides of the pot. If they have dried, add a little hot milk from the pot to soften them, then return them to the milk.
  6. Simmer until reduced to 2 cups. Add the nuts, saffron milk, cardamom powder and rose water (if using), then turn off the heat.
  7. Chill and garnish with nuts just before serving.
