Rainbow Kettle Corn That Will Bring You Happy Days • Tasty
Ingredients
- Sugar12 tbsp
- Food coloring
- Coconut oil6 tsp
- Popcorn12 tbsp
- Salt1 ½ tsp
Instructions
- Line a baking sheet with parchment paper.
- Divide the sugar into 6 small bowls, 2 tablespoons per bowl.
- Colour each bowl of sugar with 1-2 drops of a different gel food colouring (red, orange, yellow, green, blue, purple). Stir each with a clean fork until the sugar is sandy in texture.
- Add 1 teaspoon coconut oil and 2 popcorn kernels to a medium nonstick saucepan with a lid. Cover and heat over medium-high until the kernels pop.
- Once the kernels pop, reduce the heat to medium, add 2 tablespoons popcorn kernels and one bowl of coloured sugar, cover immediately and shake to combine.
- Keep shaking the pan constantly so the sugar does not burn, until the pops are more than 3 seconds apart. Then remove from the heat.
- Carefully lift the lid away from you and pour the popcorn onto the prepared baking sheet.
- Sprinkle 1/4 teaspoon salt evenly over the hot kettle corn and let it cool completely, then transfer to a bowl.
- Repeat with the remaining colours and remaining coconut oil, replacing the parchment as needed.
- Combine all the popcorn in a large bowl and toss to spread the colours evenly. Serve immediately or store in an airtight container for up to 2 days.
