Ratalu Kand Puri video recipe- Kand Bhajiya or Pakora recipe- Purple Yam Fritters
Ingredients
- Sweet potato · peeled sliced2
- Vegetable oil3 cups + 1 tbsp
- Chickpea flour1 cup
- Salt1 tsp
- Chili powder1 tsp
- Turmeric · powder1 pinch
- Cumin · powder1 tsp
- Baking soda¼ tsp
- Peppercorn · coarsely ground¼ tsp
- Coriander seed · coarsely ground¼ tsp
Instructions
- Peel the purple yams or sweet potatoes and slice them 1/4 inch thick. Soak the slices in water to stop them discolouring.
- Make the batter: mix the chickpea flour, salt, red chilli powder, turmeric and coriander-cumin powder in a bowl. Add about a tablespoon of water at first, mixing well and breaking up any lumps.
- Gradually stir in the remaining water until the batter is thick and smooth, without lumps. Stir in the baking soda.
- Heat the frying oil in a deep pan over medium-high heat. When warm, add 1 tablespoon of the warm oil to the batter and mix well.
- When the oil is ready, lower the heat to medium. Dip each yam slice in the batter to coat it, then sprinkle black pepper and coriander seeds over the top. Carefully slide into the hot oil.
- Deep fry for 6-7 minutes, turning to cook both sides, until golden brown and crisp, and the yam is cooked through.
- Drain the fritters on paper towels to remove excess oil.
- Serve hot.
