Rava Laddu Recipe | Suji Ke Laddu | सूजी के लड्डू बनाने का तरीका | Chef Sanjyot Keer
Ingredients
- Semolina
- Oil4 tbsp
- Warm water upto½ cups
- Sugar
- Cardamom · powder½ tsp
- Ghee
- Chickpea flour3 tbsp
- Almond2 tbsp
- Pistachio1 tbsp
- Cashew2 tbsp
- Raisin1 tbsp
Instructions
- Put the semolina in a large bowl with the oil and rub it in until it holds together when squeezed in a fist (ghee can replace the oil).
- Add warm water gradually and knead into a stiff dough that is not soft; the amount depends on the semolina.
- Take small portions and flatten them between your palms.
- Fry in hot oil at 165°C over medium-low heat for about 12 minutes, until light golden brown.
- Drain on a sieve and let cool slightly, then break into pieces in a bowl so they cool faster.
- Grind in batches until the texture is like coarse semolina.
- Put the ground mixture in a large bowl, sift in the powdered sugar and cardamom powder, and mix well.
- In a small pan over medium heat, melt 3 tbsp of the ghee, add the gram flour and stir over low heat until it turns biscuit-coloured.
- Add this gram flour mixture to the semolina mixture.
- In the same pan over medium heat, add the remaining ghee and the nuts and raisins, and fry over low heat until light golden brown.
- Add the nuts and ghee to the semolina mixture and stir well with a spatula.
- When warm enough to handle, mix with your hands until the ghee is fully absorbed. If it won't bind, heat a few more tablespoons of ghee and add gradually.
- Shape into small laddus.
