Rava Laddu Recipe - Suji Ladoo Recipe (Sweet semolina balls)

Ingredients

Instructions

  1. Dry roast the semolina and desiccated coconut in a pan over medium-low heat for 6-7 minutes, stirring constantly, until evenly light golden and aromatic. Turn off the heat and transfer to a plate to cool.
  2. Add the sugar and cardamom to a grinder and grind to a fine powder. Leave it in the jar for 2-3 minutes.
  3. Add the cooled semolina mixture to the grinder and pulse to a slightly coarse powder. It should not be very coarse, or the laddoos won't bind. Transfer to a mixing bowl.
  4. Heat the ghee in a pan over medium heat. Fry the cashews until light golden, then add the raisins and stir for 30 seconds. Turn off the heat.
  5. Pour the hot ghee with the nuts and raisins over the semolina mixture and stir with a spoon until the ghee is absorbed.
  6. Once cool enough to handle, press small portions firmly in your palm to form balls while still warm. This makes 10-11 laddoos. If the mixture won't bind, heat more ghee or milk and add it 1 tablespoon at a time.
  7. Store in an airtight jar at room temperature and use within a month.
