Rava vada recipe | Suji vada recipe | Instant rava vada
Ingredients
- Rava1 cup
- Yoghurt½ cups
- Onion¼ cups
- Ginger¾ tsp
- Cilantro2 sprigs
- Curry1 sprig
- Chili pepper2
- Cumin½ tsp
- Soda-bi-carbonate¼ tsp
- Salt½ tsp
- Asafoetida1 pinch
Instructions
- Mix the yogurt and water in a bowl, add the rava and soak for 10 minutes. The dough should bind well; if it is dry, sprinkle in some water.
- While the rava soaks, finely chop the onions, chilies, curry leaves and coriander, and grate the ginger.
- After 10 minutes, add the onions, chilies, leaves, cumin, salt and ginger to the soaked rava and form a dough. Beat it well by hand for 30 seconds to a minute, turning clockwise, to make the vada fluffy. Finally, add the soda and mix gently.
- The dough should be sticky and easy to spread; add water if it is dry. If it is too stiff, the vadas will turn hard.
- Heat oil in a deep pan. Grease a sheet of foil or cling film. Divide the dough into 12 portions and roll them into balls, placing them on the foil. Flatten each one and make a hole in the centre.
- Test the oil by adding a little dough: it should rise without browning, which means it is at the right temperature.
- Grease your fingers, transfer each vada from the foil onto your fingers, gently shake off, and slide it into the oil. Leave undisturbed until firm.
- Fry over medium-high heat, stirring often, until crisp and golden. Drain on kitchen paper. Fry the rest in batches and serve with chutney.
