Brown Sugar Glazed Ham
Ingredients
- Ham · cooked8–10 lb
- Butter½ cups
- Brown sugar1 cup
- Honey½ cups
- Dijon mustard2 tbsp
- Cinnamon · ground¼ tsp
- Clove · ground¼ tsp
- Garlic4 cloves
Instructions
- Preheat the oven to 300°F (150°C) and set a rack in the lower third. Take off any plastic packaging or netting from the ham and trim away the rind. Let the ham rest at room temperature for 1 to 2 hours.
- Line a baking tray or dish with foil or parchment paper if you like.
- Remove the skin from the ham, leaving the fat on. With a sharp knife, score a diamond pattern 1 inch wide over the whole ham, cutting no deeper than ¼ inch. Put the ham in the tray, pour water into the base of the pan, cover with two sheets of foil or parchment and bake for 30 minutes.
- Meanwhile, melt the butter in a small saucepan over medium heat until golden brown. Add the brown sugar, honey, mustard, cinnamon and cloves, and stir until the sugar has fully dissolved, about 2 minutes.
- Lower the heat, add the garlic and cook for another 1 to 2 minutes until fragrant and the glaze just starts to simmer. Set aside to cool until lukewarm; it should be as thick as room-temperature honey.
- After the 30 minutes, take the ham out and raise the oven to 425°F (220°C). Remove the foil or parchment, pour one third of the glaze over the ham, brushing it into the cuts. Bake uncovered for 15 minutes.
- Brush on another third of the glaze and some pan juices, then bake 15 more minutes. Repeat with the last third after another 15 minutes, for about 30 minutes in total, until the crust is dark golden brown. For a deeper flavour, mix some pan juices into the remaining glaze in the pan so it stays runny enough to brush.
- If the crust is still pink at the end of the baking time, switch on the broiler (grill) and broil for 2 to 5 minutes, watching closely so the sugar does not burn.
- Let the ham rest for 10 to 20 minutes before slicing.
