Browned Butter Parmesan Roasted Potatoes
Ingredients
- Olive oil¼–⅓ cups
- Garlic6 cloves
- Salt1 ½ tsp
- Parsley · dried1 tsp + 4 tbsp
- Thyme · dried1 tsp
- Oregano · dried1 tsp
- Black pepper · cracked½ tsp
- Parmesan cheese¾ cups
- Potato3 lb
- Butter½ cups
Instructions
- Preheat the oven to 400°F (200°C). Grease a large baking sheet with non-stick spray or oil.
- In a bowl, mix 1/4 cup olive oil, the garlic, salt, dried herbs, black pepper and parmesan. If the cheese soaks up most of the oil, add the remaining oil.
- Toss the quartered potatoes in the mixture until evenly coated.
- Spread the coated potatoes in a single layer on the baking sheet. Bake for 45-50 minutes, turning every 15 minutes or so, until browned and crisp at the edges.
- For extra crispy potatoes, broil (or grill) for 2-4 minutes, or until browned to your liking.
- While the potatoes bake, melt 1/2 cup butter in a small pot or skillet over medium heat, swirling often.
- Once the butter foams and turns golden brown with a nutty smell, remove it from the heat. Stir with a wooden spoon to lift the browned bits, then pour over the potatoes.
- Season with a little extra salt and pepper if you like, and sprinkle with chopped fresh parsley before serving.
