Caprese Stuffed Garlic Butter Portobellos
Ingredients
- Butter2 tbsp
- Garlic2 cloves
- Parsley1 tbsp
- Portobello mushroom5–6
- Mozzarella cheese5–6
- Grape1 cup
- Basil1 pinch
- Balsamic vinegar¼ cups
- Brown sugar2 tsp
Instructions
- Preheat the oven to high grill/broil and set the rack to the middle shelf.
- In a small saucepan or microwave-safe bowl, melt the butter with the garlic and parsley until the garlic smells fragrant. Brush the bottoms of the mushrooms and place them buttered side down on a baking tray.
- Turn the mushrooms over and brush the remaining garlic butter inside each cap. Fill each with mozzarella slices and tomatoes, then grill until the cheese has melted and turned golden, about 8 minutes.
- Top with basil, drizzle with balsamic glaze and season with salt to taste.
- For the glaze: in a small saucepan over high heat, bring the balsamic vinegar and sugar (if using) to the boil. Reduce to low and simmer for 5 to 8 minutes until thickened into a glaze; without sugar, reduce for 12 to 15 minutes.
