Cheesy Bacon and Egg Hash
Ingredients
- Potato24 oz
- Olive oil2 tbsp
- Bacon · diced7 oz
- Scallion2
- Egg4
- Mozzarella cheese · shredded¼ cups
- Cracked1 pinch
Instructions
- Cut the potatoes into small 3/4-inch cubes.
- Heat the oil in a large cast-iron skillet over medium heat. Fry the potatoes, stirring now and then, until golden and crisp, about 20 minutes. To speed things up, cover the pan and stir every 4–5 minutes; this takes about 15 minutes.
- Add the bacon and fry for 10 minutes, stirring now and then, until crisp. Add the scallions, stir them through and season with pepper if you like.
- Make four wells in the hash with a spoon. Crack an egg into each well and arrange the mozzarella around the eggs. Fry until the whites are set and the eggs are cooked to your liking, then serve right away.
- Oven method: Heat the oven to 400°F (200°C). Spread the potatoes in one layer in an oven-safe skillet or baking sheet, lightly spray with cooking oil and bake about 30 minutes, turning them halfway, until crisp and golden.
- Take out the pan, add the bacon and return it to the oven for 10 more minutes, or until the bacon is crisp.
- Make four wells, crack an egg into each, and arrange the mozzarella around the eggs. Bake until the whites are set and the eggs are cooked to your liking, then serve immediately.
