- Parsley¼ cups
- Beef broth · powder1 tsp
- Salt1 tsp + 1 pinch
- Cracked pepper1 pinch
- Olive oil2 tbsp
- Tomato24 oz
- Tomato paste2 tbsp
- Chili flake · flakes1 tsp
- Pepper1 pinch
- Sugar¼–½ tsp
- Mozzarella cheese · shredded1 ½ cups
Instructions
- Preheat the grill to medium-high, or the oven to 220°C (430°F).
- Put the milk and bread in a large bowl, press the bread into the milk until it is soaked, and set aside.
- Chop all the meatball ingredients. Add them to the soaked bread and mix well.
- Roll about 3 tablespoons of the mixture into a ball, place on a plate, and repeat until all the meat is used.
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides until golden; they will not be fully cooked. Move them to a warm plate.
- Heat the remaining tablespoon of olive oil in the pan. Fry the onion for about 2 minutes until translucent, stirring now and then. Add the garlic and cook for 1 minute until fragrant.
- Stir in the tomato puree, water, tomato paste, basil, oregano, chilli flakes if using, salt and pepper. Mix well and bring to a simmer. Reduce to low, taste, and add sugar if needed.
- Return the meatballs and any juices from the plate to the sauce.
- Cover and simmer for 20 minutes, stirring the sauce occasionally and turning the meatballs a couple of times, until cooked through.
- Top with the mozzarella, then grill or bake on the middle shelf until the cheese has melted and is bubbling.
- Garnish with parsley and extra dried oregano and/or basil. Serve over pasta, mashed potatoes or rice.
