Chinese Lemon Chicken
Ingredients
- Chicken breast21 oz
- Egg1
- Soy sauce3 tbsp
- Shaoxing wine1 tbsp
- Cornstarch¾ cups + 1 tsp
- Vegetable oil9 tbsp
- Garlic3 tsp
- Ginger1 tsp
- Chicken stock½ cups
- Lemon4 tbsp + 5
- Sugar2 tbsp
- Honey2 tbsp
- Salt1 pinch
- Sesame seed1 tsp
- Scallion1 tbsp
Instructions
- In a large shallow bowl, whisk the egg, soy sauce and wine. Add the chicken, mix well and marinate, covered, for 20 minutes.
- Spread the cornstarch in a large baking tray. Add the chicken and marinade to the cornstarch and coat the pieces evenly, pressing the cornstarch lightly around each piece.
- Heat the oil in a large wok, pan or skillet over medium-high heat until it reaches 325°F (165°C). Shake off excess cornstarch and fry the chicken in batches in a single layer for about 5-6 minutes, turning halfway, until golden and cooked through. Drain on a paper towel-lined plate.
- Pour off the oil and wipe the wok or pan with paper towel. Heat a little oil over medium-high heat and fry the garlic and ginger for about 30 seconds until fragrant.
- Add the stock, soy sauce, lemon juice, sugar, honey and a pinch of salt. Whisk and bring to a simmer until the sugar dissolves.
- Whisk the dissolved cornstarch mixture into the simmering sauce and stir until thickened. Add the fried chicken and toss until evenly coated.
- Garnish with sesame seeds, green onions and lemon slices, and serve immediately for the crispiest texture.
