Ingredients

Instructions

  1. Preheat the oven to 350°F (175°C). Line a large baking sheet with foil or parchment and grease it with non-stick spray.
  2. Arrange the crackers in a single layer on the sheet, in rows. Break some in half to fill the last column. Set aside.
  3. In a medium saucepan, melt the butter over low heat. Add the brown sugar, raise the heat to medium, and bring to a boil while stirring constantly.
  4. Keep boiling for 3 minutes, until the toffee turns caramel-coloured.
  5. Pour the toffee over the crackers and quickly spread it evenly with a spatula.
  6. Bake for 4-5 minutes, until the toffee just starts to bubble.
  7. Take the tray out and scatter the chocolate chips on top. Return to the oven for 2 more minutes to melt them, then spread the melted chocolate evenly with a clean spatula or knife.
  8. Scatter the peanut butter chips over the chocolate and let them sit for 2 minutes to soften, then swirl them through the chocolate with the tines of a fork.
  9. Cover with foil and refrigerate until set, or freeze for 15 minutes to chill.
  10. Peel the foil off the crackers, break into pieces, and serve or store in an airtight container.
