Creamy Garlic Mushrooms and Bacon
Ingredients
- Bacon8 oz
- Butter2 tbsp
- Mushroom26 oz
- Olive oil1 tbsp
- White wine¼ cups
- Garlic6 cloves
- Heavy cream1 ½ cups
- Parsley1 tbsp
- Thyme1 tsp
- Salt1 pinch
- Pepper1 pinch
- Mozzarella cheese½ cups
- Parmesan cheese¼ cups
Instructions
- Fry the bacon in a large oven-safe skillet over medium heat until crispy. Transfer to a paper towel-lined plate with a slotted spoon. Set aside.
- In the same pan, melt the butter. Add the mushrooms, drizzle with oil and stir, scraping up browned bits. Fry 2 to 3 minutes until lightly browned and any juices are released.
- Pour in the wine or broth and let it reduce for 2 minutes, stirring occasionally. Meanwhile, preheat the broiler.
- Add the garlic and stir for about a minute until fragrant. Pour in the cream and herbs, reduce to low, and gently simmer 4 to 5 minutes until tender and slightly thickened. Season with salt and pepper.
- Return the bacon and mix everything well. Top the mushrooms with the mozzarella and parmesan.
- Broil until the cheese melts and bubbles and the mushrooms are done to your liking, about 3 to 5 minutes.
- Serve warm.
