Creamy Parmesan Carbonara Chicken
Ingredients
- Chicken breast · boneless skinless2
- Flour2 tbsp
- Parmesan cheese11 tbsp
- Salt1 tsp
- Cracked pepper1 pinch
- Olive oil1 tbsp
- Butter2 tsp
- Bacon8 oz
- Onion1
- Garlic6 cloves
- Half & half1-1/2 cups
- Cornstarch½ tsp
Instructions
- Season the chicken with salt and pepper. In a shallow bowl, mix the flour and parmesan. Coat the chicken in the flour mixture, shake off the excess and set aside.
- Heat the oil and butter in a large non-stick pan or cast iron skillet over medium-high heat until the butter melts and the pan is hot. Fry the chicken until golden on each side and cooked through with no pink left, about 4-5 minutes per side depending on thickness. Move to a warm plate.
- Fry the bacon in the pan until crisp. Pour off excess fat, leaving about 1 teaspoon in the pan. Add the onion and garlic and fry until the onion is translucent, about 1 minute.
- Reduce to low heat and add the half and half. Bring to a gentle simmer and season to taste with a little salt and pepper. Stir in the parmesan and simmer until it has slightly melted.
- If the sauce is too thin, pour the cornstarch and water mixture into the centre of the pan and stir quickly. It will thicken right away.
- Return the chicken to the pan and serve.
