- Parsley2 tbsp
- Salt¼ tsp
- Black pepper¼ tsp
- Onion powder1 tsp
- Chicken breast3
- Breadcrumb1 ½ cups
- Parmesan cheese0.83 cups
- Garlic powder1 tsp
- Olive oil9 tbsp
- Onion1
- Tomato14 oz
- Italian seasoning · dried1 tsp
- Sugar1 tsp
- Mozzarella cheese8 oz
- Basil2 tbsp
Instructions
- In a shallow dish, whisk the eggs, garlic, parsley, salt, pepper and onion powder. Dip each chicken fillet in the egg mixture to coat, then cover and marinate for at least 15 minutes (or overnight).
- In a separate shallow bowl, mix the breadcrumbs, Parmesan and garlic powder. Dip the chicken in the breadcrumb mixture to coat evenly.
- Preheat the oven to 430°F (220°C). Lightly grease an oven tray or baking dish with cooking oil spray.
- Heat the oil in a large skillet over medium-high heat until hot and shimmering. Fry the chicken until golden and crispy, about 4–5 minutes per side.
- Place the chicken on the prepared tray and top each breast with about 1/3 cup of sauce, 2–3 slices of mozzarella and about 2 tablespoons Parmesan. Sprinkle with basil or parsley.
- Bake for 15–20 minutes, until the cheese is bubbling and melted and the chicken is cooked through.
- For the sauce, heat the oil in a medium pot. Fry the onion until translucent, about 3 minutes, then add the garlic and cook until fragrant, about 30 seconds.
- Add the tomato passata, salt, pepper, Italian herbs and sugar if using. Cover and simmer for about 8 minutes, until slightly thickened. Taste and adjust the salt and pepper if needed.
