Crispy Pork Carnitas
Ingredients
- Pork shoulder · boneless4 lb
- Salt3–4 tsp
- Pepper1 tsp
- Oregano · dried1 tbsp
- Cumin · ground1 tbsp
- Brown1
- Garlic8 cloves
- Lime2
- Orange2
- Coke¾ cups
- Bay leaf2
Instructions
- Rinse the pork and pat it dry with paper towel.
- Put the pork, salt, pepper, oregano, cumin, onion, garlic, lime juice, orange juice, Coke and bay leaves in a 6-quart slow cooker.
- Cover and cook on low for 8–10 hours, or on high for 5–6 hours, until the meat falls apart.
- Remove the pork and shred it with two forks. Keep the cooking liquid.
- To crisp in the oven: put the pork on a baking sheet lightly greased with oil spray (or lined with foil or parchment). Spoon about 1 cup of the cooking liquid over the pork. Broil on high for 5–10 minutes, until golden brown and crispy at the edges.
- To crisp on the stove: heat about 1 tablespoon of oil in a non-stick pan or cast-iron skillet over high heat. Add the pork in batches of two or three and sear until it just begins to crisp. Add about 1/2 cup of the cooking liquid and keep cooking until the liquid reduces and the meat is crispy.
- To serve: season with a little extra salt and pepper if you like. Spoon over more of the cooking liquid just before serving.
