Garlic Butter Steak & Creamy Mushroom Sauce
Ingredients
- Beef4
- Salt1 pinch
- Cracked pepper1 pinch
- Olive oil2 tbsp
- Butter4 tbsp
- Garlic8 cloves
- Thyme6–8
- Balsamic vinegar1–2 tsp
- Mushroom1 cup
- Cream½ cups
Instructions
- Let the steaks stand 30 minutes at room temperature, then season all sides with salt and pepper.
- Heat a large cast-iron skillet or pan over medium-high heat. Add 1 tablespoon of the olive oil, swirl to coat, then add the second tablespoon and swirl until the pan begins to smoke lightly.
- Place the steaks in the pan, away from you, in batches of two. Cook 3 minutes per side, or until browned.
- Lower the heat to medium-low. Add the butter, thyme and garlic cloves to the pan. Once the butter foams, baste the steaks with it.
- Keep basting for another 1 to 2 minutes, until the steaks are cooked to your liking.
- Discard the garlic and herbs, move the steaks to a plate, pour the pan juices over them and rest for 5 minutes.
- While the steaks rest, add the crushed garlic to the butter juices in the pan and sauté over medium heat for 30 seconds until fragrant.
- Add the balsamic vinegar and mushrooms and cook until soft, then stir in the cream. Season with salt and pepper to taste. Serve the steaks with the sauce.
