Garlic Mushrooms
Ingredients
- Butter4 tbsp
- Olive oil1 tbsp
- Onion½
- Mushroom1 lb
- White wine2 tbsp
- Thyme1 tsp
- Parsley2 tbsp
- Garlic4 cloves
- Salt1 pinch
- Pepper1 pinch
Instructions
- Heat the butter and oil in a large skillet over medium-high heat. When the butter has melted, add the onion (if using) and cook about 3 minutes, stirring occasionally, until soft and fragrant.
- Add the mushrooms and toss to coat in the fat. Cook 4 to 5 minutes, stirring only occasionally, until golden brown with lightly crispy edges.
- Pour in the wine (if using) and stir to scrape up the browned bits. Cook about 2 minutes, until the wine has reduced slightly and the mushrooms have absorbed some of it.
- Add the thyme, 1 tablespoon of the parsley and the garlic. Stir and cook about 30 seconds, until the garlic is fragrant. Season with salt and pepper to taste.
- Stir in the remaining parsley, toss the mushrooms in the garlic butter, taste and adjust seasoning if needed, then serve warm.
