Garlic Parmesan Mac and Cheese
Ingredients
- Pasta1 lb
- Butter5 ½ tbsp
- Breadcrumb⅔ cups
- Garlic4 cloves
- Flour¼ cups
- Milk4 ½ cups
- Cornstarch1 tbsp
- Salt1 pinch
- Pepper1 pinch
- Chicken stock · powder1 tbsp
- Cheddar cheese · grated¾ cups
- Parmesan cheese1 cup
- Mozzarella cheese6 oz
Instructions
- Boil the pasta in salted water according to the packet until just al dente. Drain, rinse well with cold water and set aside.
- Preheat the oven grill or broiler to 375°F (190°C).
- In a large oven-proof pan over medium-high heat, melt 2 tablespoons of butter. Add the Panko, stir to coat and cook until golden. Transfer to a bowl and set aside.
- In the same pan, melt 1/4 cup butter. Add the garlic and cook until fragrant, about 1 minute. Whisk in the flour and keep whisking for at least 2 minutes.
- Lower the heat to low. Gradually whisk in 4 cups of the milk, about 1/4 cup at a time, whisking after each addition. Bring to a boil until it begins to thicken.
- In a separate jug, mix the cornstarch with the remaining 1/2 cup milk until smooth, then stir it into the sauce until fully thickened. Season with salt and pepper and stir in the bouillon powder.
- Off the heat, stir in the cheddar, 3/4 cup of the parmesan and the mozzarella slices until melted. Toss the pasta in the sauce until fully coated.
- Top with the Panko and the remaining parmesan. Broil or grill for about 10 to 15 minutes, until bubbling. Let cool slightly before serving.
