Garlic Steak & Cheesy Bacon Potato Hash Foil Packs
Ingredients
- Potato26 oz
- Onion¼ cups
- Parsley4 tbsp
- Salt3 pinches
- Cracked pepper2 pinches
- Bacon · diced⅓ cups
- Scallion⅓ cups
- Cheddar cheese¼ cups
- Mozzarella cheese¼ cups
- Butter½ cups
- Garlic2 cloves
Instructions
- Preheat the grill to medium-high heat.
- Melt half of the garlic butter in the microwave for 20 to 30 seconds. Combine the potatoes and onion in a bowl, pour the melted garlic butter over them and set aside.
- Spread the remaining unmelted butter over the steak to coat evenly.
- For well-done steak, slice the fillet into 2-inch (5 cm) thick pieces. For medium-rare, cut it into 4-inch (10 cm) long pieces; for rarer steak, cut them 5 to 6 inches (13 to 15 cm) long.
- Cut four or six 15-inch (40 cm) sheets of heavy-duty foil and lay them out. Divide the steak and potatoes among the top half of each sheet, sprinkle with parsley, and season with salt and pepper.
- Fold the sides of the foil up over the steak and potatoes, then fold the bottom half of the foil over the top and fold the edges down, pressing firmly to seal.
- Place the packets on the hot grill, cover and cook for 7 minutes, then flip and cook for a further 5 minutes, until the potatoes are cooked through (about 12 minutes total).
- Carefully open the packets, watching for escaping steam. Sprinkle the cheese over the potatoes, loosely reseal with foil and leave on the grill for 3 more minutes to melt.
- Top with the cooked bacon and scallions, and season with a little extra salt and pepper if needed.
