Homemade Gnocchi
Ingredients
- Potato2 cups
- Salt1 tsp
- Cayenne pepper1 tsp
- Tarragon½ cups
- Olive oil4 tbsp
- Parmesan cheese · shredded½ cups + 1 pinch
- Flour1 ⅓ cups
- Egg1
Instructions
- Peel the potatoes, cut them into quarters and boil them in lightly salted water for 15–20 minutes, until a fork goes in easily.
- Drain and mash the potatoes until smooth. Mix in the salt, cayenne pepper, tarragon and olive oil.
- Add the parmesan, flour and egg yolk, and knead by hand into a soft, smooth dough.
- Divide the dough into 3 portions. On a lightly floured surface, roll each into a log about 2.5 cm thick and cut into pieces about 2.5 cm long.
- Boil the gnocchi in lightly salted water in batches until they float, about 1 minute. Move them to iced water to stop cooking, then drain.
- Heat the olive oil in a frying pan over medium-high heat, add the drained gnocchi and fry for 5–6 minutes, stirring gently, until golden. Season with salt and pepper.
- Serve warm, topped with a little extra grated parmesan.
