Honey Baked Ham
Ingredients
- Ham · cooked8–10 lb
- Pineapple juice⅓ cups
- Honey1 cup
- Brown sugar¼ cups
- Butter¼ cups
- Clove¼ cups
Instructions
- Preheat the oven to 150°C (300°F) and set a rack in the lower third. Remove any plastic wrap or netting from the ham and trim off the rind. Let the ham rest at room temperature for 1 to 2 hours.
- Line a baking tray or dish with foil or parchment paper.
- Remove the skin from the ham, leaving the fat on. Score a diamond pattern about 1 inch wide, cutting no more than 1/4 inch deep, over the whole ham. Press a clove into the centre of each diamond.
- Place the ham in the tray, pour the pineapple juice into the base, cover with two layers of foil or parchment, and bake for 15 minutes.
- Meanwhile, heat the butter in a small saucepan over medium heat until golden brown. Add the honey and brown sugar and stir until the sugar has completely dissolved, about 2 minutes.
- Lower the heat and simmer until the glaze thickens slightly. Remove from heat and let cool until lukewarm; it should be as runny as room-temperature honey.
- After 15 minutes, take the ham out, raise the oven to 220°C (425°F), and remove the foil or parchment. Brush one third of the glaze over the ham, working it into the cuts.
- Return the ham to the oven uncovered for 15 minutes.
- Brush on another third of the glaze and some pan juices, and repeat after another 15 minutes, until a dark golden-brown crust forms (about 30 minutes in total). Mix some pan juices into the remaining glaze to keep it runny for brushing.
- If the crust is still pink, grill on high for 2 to 5 minutes, watching closely so the sugar does not burn.
- Let the ham rest for 10 to 15 minutes before slicing.
