Honey Garlic Butter Roasted Carrots
Ingredients
- Carrot2 lb
- Butter⅓ cups
- Honey3 tbsp
- Garlic4 cloves
- Salt¼–½ tsp
- Black pepper1 pinch
- Parsley2 tbsp
Instructions
- Preheat the oven to 425°F (220°C). Lightly grease a large baking sheet with nonstick spray and set it aside.
- Cut the trimmed carrots into thirds.
- Melt the butter in a pan over medium heat. Stir in the honey and keep stirring until fully melted into the butter. Add the garlic and stir for 30 seconds until fragrant.
- Add the carrots and toss them through the sauce for about 1 minute so it thickens. Season with salt and pepper.
- Spread the carrots on the baking sheet in a single layer and toss to coat evenly.
- Roast for 20 minutes, until a fork goes easily into the carrots. Then broil on high for 2-3 minutes to crisp and char the edges.
- Optional: return the carrots to the pan and simmer over high heat for 5 minutes until the sauce becomes a glaze. Add a little more salt and pepper if wanted.
- Garnish with parsley and serve.
