Honey Lemon Garlic Chicken
Ingredients
- Chicken thigh5
- Salt1 pinch
- Honey½ cups
- Lemon¼ cups + 4
- Soy sauce1 tbsp
- Rice wine vinegar1 tbsp
- Garlic2 + 6 cloves
- Scallion1 handful
Instructions
- Preheat the oven to 360°F (180°C).
- Put the chicken thighs in a large shallow dish, season with salt, and set aside.
- Whisk the honey, lemon juice, soy sauce, vinegar and minced garlic in a large jug. Pour about 1/4 cup over the chicken and turn each thigh to coat.
- Heat an oven-proof skillet over medium-high heat. Sear the chicken skin-side down until golden, about 5 minutes. Turn and sear the other side. Pour off most of the oil, leaving about 1 tablespoon.
- Arrange the chicken skin-side up in the pan, place the whole garlic cloves between the thighs, and spoon half of the remaining sauce over each thigh (about 1–2 tablespoons per thigh). Bake for 40–45 minutes, until cooked through and the juices run clear. The skin should be crispy and sticky.
- While the chicken bakes, bring the remaining sauce to a boil in a small saucepan over medium-high heat. Lower the heat to low and simmer, stirring occasionally. Each time it bubbles up to the rim, lift the pan off the heat. Repeat until slightly reduced and thickened, about 6 minutes.
- Serve the chicken with the sauce, lemon zest and slices, and sliced green onions if you like.
