Low Fat Chocolate Mug Cake
Ingredients
- Flour2 tbsp
- Natural granulated sweetener1 tbsp
- Cocoa powder2
- Baking powder¼ tsp
- Salt1 pinch
- Butter1 tsp
- Almond milk2 tbsp
- Vanilla0.13 tsp
- Chocolate chip¾ tbsp
Instructions
- Grease a ½-cup mug with cooking spray. Add the flour, sweetener, cocoa powder, baking powder and salt, and whisk to combine.
- Add the melted butter, milk and vanilla and mix well.
- Optional: fold in ½ tbsp mini chocolate chips, then sprinkle the rest on top.
- Microwave on High for 40 seconds. Check the top with a fingertip; if the middle is still underdone, microwave for 10 seconds more. Do not overcook, as it keeps cooking in the mug.
- Oven option: preheat the oven to 180°C (350°F). Grease a ½-cup ramekin with cooking spray, prepare the batter as above and bake for about 15 minutes, until a toothpick inserted in the centre comes out clean. For a fudgier cake, check at 11 minutes; the toothpick should come out slightly moist, not coated in batter.
