Mongolian Beef and Broccoli
Ingredients
- Beef2 lb
- Soy sauce9 tbsp
- Shaoxing wine1 tbsp
- Cornstarch3 tbsp
- Brown sugar⅓ cups
- Hoisin sauce2 tbsp
- Oyster sauce1 tbsp
- White pepper · ground¾ tbsp
- Oil¼ cups
- Sesame oil1 tsp
- Garlic8 cloves
- Ginger½ tbsp
- Broccoli1
- Scallion4
Instructions
- Whisk the marinade ingredients together until well combined. Marinate the beef slices for 30 minutes to 1 hour; longer makes the meat more tender.
- Meanwhile, whisk the sauce ingredients together until smooth. Set aside, then prepare the vegetables.
- Heat a wok over medium heat with 1/4 cup oil. When the oil is hot, stir-fry the beef in batches of four, without crowding, for about 2 minutes, until just crisp at the edges. Keep the heat moderate so the oil doesn't spatter.
- Remove the beef, leaving as much oil as possible in the wok, and set it aside.
- Heat the sesame oil with the remaining oil in the wok and stir-fry the garlic and ginger until fragrant. Add the broccoli and stir-fry until bright green and just tender.
- Return the beef to the wok with the sauce and simmer until the beef is cooked through, about 2 minutes. Add the cornstarch mixture and sliced green onions, and cook for another minute, stirring quickly, until the sauce thickens.
- Garnish with extra sliced green onion and serve right away over rice or steamed vegetables.
