Ingredients
- Chicken breast1 lb
- Italian seasoning1 ½ tsp
- Onion powder½ tsp
- Salt2 pinches
- Egg2
- Garlic1 clove
- Cracked pepper1 pinch
- Parmesan cheese1 cup
- Almond flour½ cups
- Olive oil2 tbsp
- Butter1 tbsp
- Marinara sauce26 oz
- Mozzarella cheese · shredded8 oz
- Chili flake · flakes1 pinch
- Basil2 tbsp
Instructions
- Cut each chicken breast in half horizontally to make 4 fillets. Season generously with Italian seasoning, onion powder, salt and pepper.
- In a shallow bowl, whisk the eggs, garlic and Italian seasoning, add a pinch of salt and pepper, and put the chicken in to marinate.
- In another shallow bowl, combine the parmesan and almond flour.
- Dip each piece in the egg mixture, let the excess drip off, then coat in the parmesan mixture, pressing lightly. Turn and repeat, then shake off the excess.
- Heat the oil and butter in a large non-stick skillet over medium-high heat. Fry 2 pieces at a time, untouched, for about 4 minutes until the coating is crispy, golden and set.
- Flip and fry the other side until golden and cooked through. Repeat with the remaining chicken.
- Set the oven rack to the middle and preheat the broiler to 400°F (200°C). Lightly grease a baking dish.
- Spread half the marinara over the dish, sprinkle with red pepper flakes if using, and lay the chicken in a single layer. Spread the remaining sauce over the chicken.
- Top with the mozzarella and parmesan, then broil for 5 to 10 minutes, until the cheese is bubbling and melted and the chicken is cooked through.
- Sprinkle with basil or parsley before serving.
