Quick Soft Cinnamon Rolls

Ingredients

Instructions

  1. Preheat the oven to 200°F (100°C). Combine the warm milk, melted butter, sugar and yeast in a large bowl and let stand for 10 minutes, until frothy.
  2. Whisk the egg into the milk mixture. Add exactly 3 1/2 cups flour and the salt and mix to a soft, sticky dough. Turn it onto a lightly floured surface and knead for about 2 minutes until smooth and elastic, dusting with flour as needed.
  3. Lightly oil a large bowl and put the dough in, turning once to coat. Cover with a damp towel, turn the oven off and place the bowl inside. Let rise for 30 minutes; the dough is ready if it springs back when pressed with two fingers. Punch it down, cover and rest for another 30 minutes, or until doubled.
  4. Roll the dough into a 19 x 13 inch rectangle on a lightly floured surface. Brush with melted butter, sprinkle with brown sugar and cinnamon, and rub the mixture gently into the butter. Roll up tightly from one long side, pinch the seam to seal, trim the ends and cut into 12 or 15 slices.
  5. Arrange the slices in a lightly greased 9x13 inch baking dish, cover with the damp towel and let rise for 30 minutes more, or until doubled. Meanwhile, preheat the oven to 350°F (175°C).
  6. Bake the rolls for 25 minutes, or until lightly golden, then let cool slightly.
  7. Beat the cream cheese, butter and vanilla until smooth, then beat in the powdered sugar until lump-free. Spread over the rolls and serve warm.
