Red Velvet Marbled Waffles
Ingredients
- Egg2
- Almond milk1 ½ cups
- Greek yoghurt½ cups
- All purpose2 cups
- Baking powder1 ½ tbsp
- Salt¼ tsp
- Brown sugar4 tbsp
- Butter · melted2 tbsp
- Cocoa powder3 tsp
- Red colouring2 tsp
- Vanilla · paste2 tsp
Instructions
- Preheat the waffle maker following the manufacturer's instructions.
- Whisk the eggs, milk and Greek yogurt together in a medium bowl or jug until well combined.
- In a separate bowl, mix the flour, baking powder, salt and sugar. Whisk the melted butter into the wet mixture, then pour the wet ingredients into the dry and whisk lightly until combined and creamy; a few lumps are fine.
- Split the batter in two. Add the cocoa powder and red colouring to one portion and mix well. Add the vanilla bean paste to the other portion.
- If possible, pour both batters into a medium jug together; otherwise keep them separate.
- Grease the waffle maker lightly. For each waffle, pour 1/2 cup of batter, or follow the manufacturer's amounts. For marbled waffles, pour 1/4 cup of red velvet batter in a zigzag, add 1/4 cup of vanilla batter on top, and swirl with a plastic spatula before closing the lid.
- Cook until done, then transfer each waffle to a cooling rack so it stays crisp before the next one.
- Serve with ice cream, berries and melted chocolate, or with syrup, whipped cream or powdered sugar if preferred.
