Seared Salmon with Avocado Tomato Salsa
Ingredients
- Salmon · skinless20 oz
- Salt1 pinch + ¼ tsp
- Pepper1 pinch
- Lemon3 tbsp
- Olive oil1 tbsp
- Butter2 tbsp
- Garlic6 cloves
- Tomato3
- Red onion2 tbsp
- Cilantro1 tbsp
- Serrano pepper½
- Lime1 tbsp
- Avocado1
Instructions
- Pat the room-temperature salmon fillets dry with paper towel and season all over with salt and pepper. Squeeze 1–2 teaspoons of lemon juice over each fillet and rub it in.
- Heat the olive oil in a large non-stick pan over medium-high heat until hot.
- Place the salmon fillets flesh side down, pressing lightly so the whole surface touches the pan. Sear without moving for 3–4 minutes, until crisp and golden.
- Flip the fillets and sear the other side for 2 minutes. Then add the butter, chopped garlic and the remaining lemon juice.
- Cook for a further 1–2 minutes, until the salmon reaches the doneness you like, spooning the butter and garlic over each fillet. Taste and adjust the salt, pepper and lemon.
- While the salmon cooks, combine the salsa ingredients in a bowl (except the avocado).
- Top each fillet with the tomato salsa and avocado slices, drizzle with the buttery sauce and serve immediately.
