- Salt½ tsp + 1 pinch
- Pepper½ tsp
- Breadcrumb½ cups
- Parmesan cheese⅓ cups
- Chicken breast · skinless boneless4
- Potato8–10
- Butter½ cups
- Green bean1 lb
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking sheet with oil spray or a thin layer of oil.
- In a large bowl, whisk the egg, lemon juice, 2 teaspoons garlic, parsley, 1/2 teaspoon salt and 1/2 teaspoon pepper.
- Dip the chicken in the egg mixture, cover and refrigerate for 30 minutes to 1 hour if time allows.
- Mix the breadcrumbs and parmesan in another bowl.
- Coat each egg-dipped chicken piece in the breadcrumb mixture, pressing lightly so it sticks evenly.
- Place the chicken on the baking sheet and lightly spray with oil. Arrange the potatoes around it in a single layer.
- Mix the melted butter, 2 teaspoons garlic and a pinch of salt. Pour half over the potatoes and toss to coat.
- Bake for 15 minutes.
- Take the sheet out, flip each chicken breast, and move the potatoes to one side. Place the green beans on the other side, then pour over the remaining garlic butter.
- Return to the oven and broil (or grill) on medium-high for 10 more minutes, until the chicken is golden and crisp and the potatoes are cooked through.
- Sprinkle with chopped parsley if you like, and serve right away.
