🤤 Red Bean Soup: Your New Favorite Dessert! (紅豆沙)
Ingredients
- Red bean14 oz
- Lotus seed2 oz
- Dried lily bulb2 oz
- Rock sugar2 oz
- Brown sugar6 oz
- Dried mandarin peel1 piece
- Salt½ tsp
Instructions
- Rinse the red beans in clean water, pour off the water, rinse again and pour off. Soak them in clean water covering them for at least 1 hour, up to overnight, but no more than a day.
- Wash the lotus seeds and dried lily bulbs and soak them the same way, in clean water covering them, for at least 1 hour.
- In a large pot, add water, salt, the soaked beans and the dried mandarin peel. Bring to a boil on high, then reduce to the lowest heat and simmer for 30 minutes.
- Add the soaked lotus seeds and lily bulbs and simmer on the lowest heat for another hour.
- Test by squeezing a bean; it is done when it crushes easily between your fingers. Simmer longer for a softer texture, or less for firmer beans.
- Add the rock sugar and brown sugar and stir until dissolved.
- To thicken, press some beans with a ladle, or stir in a 1:2 cornstarch and water slurry slowly while stirring. Dilute with more water if too thick.
- Taste and add more sugar if needed, then transfer to a serving bowl. Store leftovers in the refrigerator and reheat or serve cold.
