Ingredients

Instructions

  1. Wash the eggs and rub them clean in water.
  2. Place the eggs in a pot, cover them fully with cold water, and add the salt and vinegar. Set the stove to high heat, cover the pot, and wait for it to boil.
  3. Once boiling, keep it boiling on high heat for 5 minutes, then remove the pot from the heat and let the eggs sit for 3 minutes.
  4. Move the eggs to a bowl of cold water and soak them for 2 minutes.
  5. Wipe each egg dry on a towel.
  6. Mix water with the red food coloring in an empty bowl. Dip each egg in the red solution for 30 seconds, then set it on a plate.
  7. Peel the ginger and cut it into thin slices.
  8. Put the ginger slices in a bowl, add the salt, shake the bowl to mix evenly and separate the slices, then let them sit for 5 minutes.
  9. In another empty bowl, combine the sugar and vinegar. For older ginger, add an extra tablespoon each of sugar and vinegar. Optionally, add about 1/2 tsp of the red water solution for a pink color.
  10. After the 5 minutes, rinse the ginger in water for 20-30 seconds, drain it in a colander, and press out the excess water against the colander.
  11. Add the ginger to the marinade and mix so the slices are submerged.
  12. Cover the bowl with plastic wrap and refrigerate overnight.
