- Cream the butter and sugar in a mixing bowl. Add the eggs one at a time, mixing after each. Add the food colouring and vanilla and beat until well combined.
- In a clean bowl, whisk together the flour, cocoa powder and baking soda.
- In a separate bowl, mix the milk and vinegar and leave for about 5 minutes.
- Add half of the milk mixture and half of the dry ingredients to the butter mixture and mix until combined. Then add the rest of each and mix until combined.
- Pour into a greased cake tin and bake at 180°C (350°F) for about 35 minutes, or until a skewer comes out clean. Cool on a wire rack.
- Crumble the cooled cake into fine crumbs with your fingertips, and set aside a handful of crumbs for decorating.
- Let the cream cheese come to room temperature, then whip it lightly with a whisk or hand beater until softened.
- Beat in the icing sugar until well combined.
- Mix in the cake crumbs with a wooden spoon until lump-free, velvety and sticking together.
- Roll 1 tablespoon portions of the mixture into balls and place on wax paper. Chill for at least a few hours until set.
- Melt the chopped white chocolate in a heatproof bowl over a double boiler until completely smooth.
- Dip the chilled truffles in the melted chocolate, let excess drip off, and place on wax paper to set. Sprinkle with the reserved crumbs.
